WILD CHICKEN WEDGES

Anyone for a South-of-the-Border snack?  Full of flavor, low-fat and low-carb, but no one can tell! This is one of those, “diabetic recipe? You’re joking!” recipes.

WILD CHICKEN WEDGES            4 Servings

2 – 8 inch fat-free flour tortillas

Non-stick cooking spray

1/3 cup shredded low-fat cheddar cheese

1/3 cup chopped cooked chicken

1 green onion chopped (about 1/4 cup)

2 tablespoons mild, thick and chunky salsa

 

 

Heat a large non-stick skillet over medium heat until hot.

Spray 1 side of a tortilla with cooking spray, and place sprayed side down into skillet.

Top with cheese, chicken, onion and salsa.

Place remaining tortilla over mixture and spray the top with cooking spray.

Cook 2 to 3 minutes per side, or until golden brown and the cheese is melted.

Cut into 8 triangles.
