Diabetic Apple Cake

This diabetic apple cake is fixed often in my home. Sometimes you need a break from the classic apple pie. With nutmeg, cinnamon, and apples. You really can't go wrong! Top it off with some sugar free carmel sauce for a very sweet treat.

Apple Cake

Yield: 1 cake

Measure Ingredient2 1/2 cup Flour;
3 teaspoons Soda;
2 teaspoons Cinamon
1/2 teaspoon Nutmeg;
1 teaspoon Salt;
1 cup Butter;
2 teaspoons Vanilla;
2 Eggs;
1 teaspoon Liquid Sugar substitute;
4 cups Grated apple;
1 cup Walnuts;

1. Mix dry ingredients; add butter, eggs, sugar substitute, and blend well. Stir in grated apples and nuts.

2. Bake in well-greased 9 x 13 pan at 375 degrees, 40-50 minutes.

Food Exchange per serving: 1/2 FAT EXCHANGE + 1 STARCH/BREAD EXCHANGE + 1/2 FRUIT EXCHANGE

Apple Fruit Tips

To have any apple dessert turn out great really starts with how good the apples are. When you purchase apples at your local grocery store, make sure there are not signs of damage on the outside of the apple. When storing apples, always always always refrigerate them. Keep them away from all vegetables because of the ripening agent that they release.

The best/ripest apple can be found at your local farmer's market. If you happen to be out picking apples from your own apple tree, make sure you pick from the sunny side of the tree. These apples are the best.
