Diabetic Baked Eggplant Recipes




These diabetic baked eggplant recipes are full of flavor. You can grill them, baked them and even broil eggplant! Enjoy these recipes.



Baked Eggplant


Measure Ingredient

1 slice Eggplant;

1 slice Onion;

1 ounce Cheddar cheese; shredded

2 tablespoon Condensed tomato soup;

1 teaspoon Dry bread crumbs;

¨ù teaspoon Thyme;

¨ù teaspoon Salt;

dash Pepper;

1.Cook eggplant and onion in small amount of water until, tender. Drain; reserve liquid. Place eggplant and onion in small baking dish. Top with cheese.

2. Blend condesnsed soup, 1 Tb of eggplant liquid, bread crumbs, thyme, salt, and pepper. Pour over eggplant; cover.

3. Bake at 350f for 30 minutes. Microwave: Uncover. Cook on high for 5 minutes. Turn after 2 minutes.

Baked Eggplant


6 servings

Measure Ingredient

1 large Eggplant

¨÷ cup Butter (or marg.); melted

¨ö teaspoon Garlic salt

¨ö teaspoon Italian seasoning

¨ù teaspoon Salt

¨û teaspoon Pepper

1. Peel the eggplant, and then cut into 3/4" slices. Combine butter, garlic salt, and Italian seasoning; stir well. Brush eggplant sliced with butter mixture, and sprinkle with salt and pepper.

2. Place eggplant about 3 to 4 inches from coals. Grill over medium coals 10 minutes or until tender, turning and basting occasionally.
