This diabetic broccoli salad recipe gives a punch to this vegetable. I love when I find a new way to eat my vegetables and this is definitely one of them. Enjoy the tang and the sweetness of this recipe.
Find it hard to get your 5 a day in? Finely chop raw mushrooms and add
it to this salad. It is delicious and you hardly know you are eating
something that is so good for you. I use my chopper and get the pieces
pretty fine so that my son will eat them. Give it a try!
Servings: 10= 1/10 of the salad recipe
1 cup miracle whip free nonfat salad dressing
2 tbsp sugar
2 tbsp vinegar
1 bunch broccoli, cut into florets, about 6-cups
4 cups loosely packed torn spinach
1/2 cup slivered red onion
1/4 cup oscar mayer real bacon bits
1/4 cup raisins
1. Mix dressing, sugar, and vinegar in large bowl. Add remaining ingredients; mix lightly. Refrigerate.
