Diabetic Chicken Dijon Recipe




These diabetic chicken recipes are some of my favorite recipes. This diabetic chicken dijon recipe is a real hit with me because I love food with lots of flavor! My husband can eat chicken 7 days a week.... so I'm always looking for different recipes to cook. :) This recipe was so incredibly EASY to prepare, and tastes like your slaved all day in the kitchen.

For a lower fat version, leave off the bread crumbs. Also, to add more flavor throw it on the barbecue!



Chicken Dijon


Servings: 8 =1 breast Each

MeasureIngredient
• 8 ounce carton plain yogur unsweetened low-fat
• ¼ cup Dijon mustard
• 8 Chicken breast halves;(3oz) skinned
• ½ cup Soft breadcrumbs
• Vegetable cooking spray

1. Combine yogurt and mustard, stirring until well blended. Brush breast halves evenly with yogurt mixture, and dredge breadcrumbs.

2. Arrange chicken in a 12 x 8 x 2 baking dish coated with cooking spray. Cover and bake at 400 degrees of 30 minutes. 3. Increase Temperature to 450 degrees. Bake, uncovered, for 15 minutes or until chicken is done and coating is browned.
