Diabetic Chili

This diabetic chili is a favorite. During the year, I'm known to drag my family members to chili cook offs. I love the music, the vibe, and oh the chili. It's great, you can't feel your mouth from the spice of certain chili dishes and yet you have to vote at the end for your favorite. Never been to a chili cook off? Invite family members over and tell them to bring their best chili recipe. :) It will be a family cook off tradition. You can start with this recipe....

Turkey Chili

Yield: 4 servings

Measure Ingredient

2 cups Chopped cooked turkey
1 Garlic clove, minced
1 medium Onion, chopped
17 ounces Can red kidney beans
6 ounces Can tomato paste
28 ounces Can tomatoes
1 Bay leaf
1 tablespoon Chili powder (or 2 to taste)
1/2 teaspoon Cumin seeds

1. Combine the turkey, garlic, onion, and green pepper in a nonstick skillet. Saute until the vegetables are soft. Add the remaining ingredients and cover.

2. Simmer over low heat for 30 to 60 minutes or until the flavors are blended.
