Diabetic Dates With Bacon


Diabetic dates with bacon...

These Spanish Style Dates with Bacon are oh so simple to make. I am a huge fan of less ingredients with MORE flavor. This recipe just about encompasses all of the flavors that I like together. You have the sweetness of the dates, the crunch of the almonds, and the smokey bacon taste that make this mouthwatering.

Dates are very rich in iron, they are an energy booster, aid in the digestive process, and satisfy a sweet tooth. Really, there is no excuse to incorporating dates into your diet. Now, I can't claim that the bacon wrapped around the dates is good for you, but at least something is!

Spanish Style Dates with Bacon


20 pitted large dates
20 roasted, unsalted almonds
10 slices bacon, cut crosswise in half


1. preheat oven to 400 degrees. Cut a small slit in each date. Insert an almond into the date and press the date together to seal. Wrap each date with a bacon slice.

2. Line a baking sheet with foil or parchment paper. Place a roasting rack on top of the baking sheet. Add the dates and roast for 20 minutes until the dates are hot and the bacon is crips. Serve immediately with toothpicks.

Nutritional Information: 1/2 Fruit, 1/2 Fat. Calories 45, Fat 2.0g, cholestrol 5mg, sodium 70 mg, carbohydrate 6g, fiber 1g, sugars 5g, protein 2g.
