Diabetic Easter Cake Recipes

These diabetic Easter cake recipes will have your kids and family smiling after Easter Dinner. Pies tend to be made for Thanksgiving and Christmas holidays, so why not change it up and bake a cake for Easter. I have put some fun, light Easter cake recipes perfect for this occasion. Apricot Coffee Cake Recipe

1 1/2 cup Flour

1/4 tsp Salt

2 tsp Baking powder

12 tsp Equiv.sweetner

1 Egg

1/4 cup Nonfat dry milk

2/3 cup Water

1 tsp Vanilla

2 cup Canned apricots,drain+chop

Ground cinnamon

Recipe Instructions: 1.Preheat oven to 375F. In a small bowl, sift flour, salt and baking powder.

2. In another bowl, cream sweetner, egg and margarine on lowspped of an electric mixer. Add dry milk, water and vanilla. Beatuntil blended. Stir in dry ingriedients. Stir until smooth.

3. Spread batter in 8" square pan that has been sprayed with a nonstick cooking spray.

Carrot Cake - A Perfect Diabetic Easter Cake Recipe

1/2 cup Grated carrot

1 1/4 cup Chopped dates

1 cup Raisins

1 1/3 cup Water

1/4 cup Applesauce,unsweetned

1 tsp Cinnamon

1 tsp Ground cloves

1 tsp Nutmeg

2 cup Whole wheat flour

1 tsp Baking powder

1 tsp Baking soda

Recipe Instructions: 1. Preheat oven to 350 F. Place the carrots, dates, raisins, water, applesauce, cinnamon, cloves and nutmeg in a saucepan, bring to boil, reduce the heat, and simmer for 5 minutes. Cool.

2. Stir the dry ingredients together. Combine the wqet and dry mixtures and stir until well blended.

3. spoon the batter into an 8x8" nonstick cake pan and bake for 45 to 50 minutes.

VARIATION: You may add 1/2 cup choppednuts to the wet ingredients before combining with the dry.Makes 1 cake. Servings: 1

Diabetic Fruit Cakes Recipe

2 cups water

2 cups raisins

1 cup unsweetened apple sauce

2 eggs

2 tbsp liquid sweetener

3/4 cup cooking oil

1 tsp soda

2 cups plain flour

1 1/4 tsp cinnamon

1/2 tsp nutmeg

1 tsp vanilla

Recipe Instructions: 1. Cook raisins in water until water is gone. Add the applesauce, eggs, sweetener and oil and mix well. Blend in the other ingredients which have been sifted together. Add vanilla.Pour into greased and floured pans, preferably loaf pans.Bake about 1 hour at 350 degrees or until done. Makes 10 to 12 servings. Servings: 4
