Diabetic Falafel Recipe


This diabetic falafel recipe was a good find. Not familiar with falafel? Falafel is a fried ball made up of chickpeas and sometimes fava beans. Well in this recipe, they are made out of garbanzo beans. It is typically served in a pita to make a wrap or it can be served alone for a great appetizer.

Falafel

Yield: 20 balls

Measure Ingredient
3 cups Garbanzo beans; cooked
1 tablespoon Lemon juice
1/2 cup Onion; chopped
2 tablespoons Flour, whole wheat pastry
1/4 cup Wheat germ
1/4 cup Parsley
1/4 cup Sesame seed
1/4 teaspoon Pepper
1/4 teaspoon Garlic powder
2 tablespoons Oil


1.Heat oven to 350^F.

2. In a food processor or blender grind garbanzo beans, lemon and onion. Remove and add flour, wheat germ, parsley, sesame seed, pepper and garlic powder.

3. Form into 20 falafel balls.

4. Heat oil in a large baking dish, then add falafel and bake 15 min, stirring occasionally.
