Diabetic Fruit Salad



This diabetic fruit salad recipe is a real treat. I love nuts mixed in with fruit. It gives it a little crunch with a whole lot of sweetness. You can serve this for dessert or for a side dish.

Fruit Salad


Servings: 6= 1/2 cup per serving

0.50 sm Cantalouple, pared & diced0.50 c Strawberries, fresh & slice0.50 c Green grapes, halved and se0.25 c Yogurt, plain & low-fat2.00 tb Mayonnaise, reduced calorie1.00 tb Brown sugar or substitute e1.00 tb Walnuts, chopped6.00 Lettuce leaves, optional

1.Combine the cantaloupe, strawberries and grapes.

2. Combine yogurt, mayonnaise, brown sugar or substituteand nuts; mix well.

3.Stir yogurt mixture into fruit mixture.

4. Serve on lettuce leaves if desired.

YIELD: 6 servings of 1/2 cup eachEXCHANGES: 1 fruit and 1 fat
