Diabetic Mayo Muffins



Maybe you never thought that you would make diabetic mayo muffins, but here you are! I guarantee that this will be the talk of the office, party, or dinner table. The secret ingredient is.....mayonnaise! :) Let me know what you think!






Mayo Muffins


Servings: 6= 1 muffin each Prep Time: 5 minutes! Bake Time: 15

1 cup of flour ( self rising is the best flour to use for this recipe)

1/2 cup skim milk

1/4 cup low fat mayonnaise

non-stick cooking spray

1. In a large bowl, mix the flour, skim milk, and mayonnaise until all ingredients are moist.

2. Preheat oven to 400 degrees

3. Use muffins cups for best results. Place muffin cups in a tin and fill with your batter about 2/3 full.

4. Bake for 15 minutes, but keep an eye on the them.
