Diabetic Mexican Corn Salad


This diabetic mexican corn salad is one of my favorite side dishes. The taste of spicy and sweet together make a great combination. Try it, I know you'll love it.



Mexican Corn Salad


Servings = 4 Measure Ingredient: 20 ounce Corn; whole kernel

1 Pimiento; chopped

1 Onion; chopped

1 Green pepper; chopped

1 small Cucumber; chopped

½ cup Salad dressing; French

Lettuce cups;

1. Drain corn. Combine corn, pimiento, onion, green pepper, and cucumber.

2. Add French dressing and mix well.

3. Serve in lettuce cups.
