Diabetic Nut Brownies




These diabetic nut brownies are for the nut lovers! I love all types of nuts; walnuts, peanuts, cashews. Yum, it kind of gives it that sweet and salty mixture that I'm a sucker for. Enjoy these diabetic nut brownies recipes!

Carob Brownie Recipe


Recipe Ingredients: 1/2 cup unsweetened applesauce

1/2 cup honey

1 egg

1 egg white

1 tsp vanilla

1/3 cup carob powder or cocoa

2/3 cup unbleached flour

2 tsp baking powder

1/2 cup chopped walnuts, (optional)

Recipe Instructions: 1. Preheat the oven to 325 degrees. In a large bowl, beat together the applesauce, honey, egg, egg white, and vanilla.

2. In a small bowl, combine the carob, flour, and baking powder. Add to the applesauce mixture. Stir in the nuts. Pour the mixture into an oiled 8- by 8-inch baking pan. Bake for 20 to 25 minutes. Remove from the oven and cool completely. Cut into squares.

This recipe yields 12 servings. Serving size: 1 brownie.

Exchanges Per Serving: 1 Carbohydrate.

chocolate Nut Brownies


30 servings

Measure Ingredient1 Square unsweetened chocolate -=OR=--- No-melt unsweetened choc.

1/2 cup Shortening

2 tablespoon Sweetener

2 teaspoon Vanilla

2 Eggs; beaten

1 cup Sifted all-purpose flour

1/2 teaspoon Baking soda

¼ cup Chopped nuts

1. Melt shortening and chocolate over low heat. Remove from heat. Add liquid sweetener (forgot to put in the recipe that it was liquid), vanilla and beaten eggs. Stir until well blended. Add flour and baking soda; mix well. Stir in nuts. Pour into greased (can spray with Pam) 8" cake pan. Bake at 325 for 20 mins; cool. Cut into 30 squares.
