Diabetic Orange Chicken

This diabetic orange chicken recipe has a very sweet taste to it. If you are going for a tangy orange chicken recipe, this is not the one. With that said; this is one of my favorite chicken recipes. Well, I suppose it's because I'm a sucker for anything sweet. Now my husband would have preferred to have more of a tangy chicken, so I'll be on the look out for some tangy orange chicken recipe to feature on this site.

Orange Baked Chicken Recipe

4 boneless skinless chicken breasts, halved
2 tbsp butter, melted
1/2 tsp salt, (optional)
Freshly-ground black pepper, to taste
3 tbsp flour
1/2 tsp salt, (optional)
1/4 tsp dry mustard
1/2 tsp cinnamon
1/8 tsp ground ginger
1 1/2 cups orange juice, boiling

Recipe Instructions:
1. Preheat oven to 375 degrees. Place chicken breasts in baking dish. Brush with melted butter. Sprinkle with salt and pepper. Bake 15 minutes, uncovered.

2. Put remaining butter in small saucepan. Add flour, salt, mustard, cinnamon, and ginger. Cook, stirring, 2 to 3 minutes. Remove from heat and pour on boiling orange juice, beating vigorously with a wire whisk. Cook, stirring, 5 minutes or until thickened.

3. Pour over chicken and bake another 15 minutes. Set oven to broil and brown chicken for 2 to 3 minutes before serving.

This recipe yields 8 servings. Serving size: 1/8 recipe.

Exchanges Per Serving: 3 Very Lean Meat, 1 Fat.

Nutrition Facts: Calories 200; Calories from Fat 55; Total Fat 6g; Saturated Fat 3g; Cholesterol 81mg; Sodium 359mg; Without Added Salt 93mg; Carbohydrate 7g; Dietary Fiber 0g; Sugars 5g; Protein 27g.

Comments: This baked casserole takes about 15 minutes to prepare and 30 minutes to bake.
