Diabetic Parmesan Rice
This diabetic Parmesan rice recipe is a nice change from your typical side of rice. A little onion, garlic, and Parmesan cheese go quite nicely with rice. Enjoy, and let us know how you like this!
Rice Parmesan Recipe
Recipe Ingredients: 1 tbsp olive oil 1 medium onion, chopped 1 garlic clove, minced 1 cup low-sodium chicken broth 1 cup uncooked rice 1/2 cup dry white wine 1/2 cup grated Parmesan cheese
Recipe Instructions:
1. In a skillet over medium heat, heat oil. Add onion and garlic and saute for 8 minutes.
2. Stir in chicken broth, rice, and wine and bring to a boil. Reduce heat to low, cover, and continue cooking for 20 to 25 minutes or until liquid is absorbed. Transfer to a serving bowl, and add cheese before serving.
This recipe yields 4 servings. Serving size: about 1/2 cup. Exchanges Per Serving: 3 Starch, 1 Fat.
