Diabetic Pasta Salad
This diabetic pasta salad is a meal in itself! It makes dinner time very simple if I know that I can make one dish that meats all the nutrition requirements. With chicken, vegetables, and pasta, you can't go wrong. :)
Dijon Pasta Salad
4 servings
Measure Ingredient
1¨ú cup (4 oz) tri-color rotini uncooked
8 ounce (1 carton)low fat Yogurt; plain Dannon
¨÷ cup Wheat germ; Kretschmer any flavor
3 tablespoon White wine vinegar;
1 tablespoon Dijon mustard;
¨û teaspoon Black pepper;
1 cup Chicken breast; cooked
¨ú cup Broccoli flowerets;
¨ö cup Tomato; seeded chopped
¨÷ cup Red onion; chopped
1. Cook pasta according to package directions.
2. In medium bowl, combine yogurt, wheat germ, vinegar, mustard and pepper; mix well. Add pasta and remaining ingredients: toss to coat.
3. Serve immediately or chill before serving. Sprinkle with additional wheat germ before serving.
