Diabetic Pear Salad





This diabetic pear salad is the perfect mix of sweetness and tartness. I think my taste buds crave this more than sweet and salty. I'm not certain about that, but once you try this salad you will be hooked. :)



Pear Salad


5 pears

3 tablespoons lemon juice

3 tablespoons apple juice

1 tablespoon plain nonfat yogurt

1 tablespoon fresh chives

1 ounce of gorgonzola cheese

Servings: 4 = 1/4 of the salad recipe

1. Take half of a pear and peal the skin off of it. Blend the pear in the blender with 2 tablespoons of lemon juice.

2. To the blended mix add the apple juice, chives and yogurt. Blend until well mixed. (This is your salad dressing)

3. Cut your pears to desired cuts and toss them with one tablespoon of lemon juice.

4. On a platter arrange your pears. Sprinkled on the gorgonzola cheese and drizzle the salad dressing over the top of everything.

Nutritional Information: 164 Calories, 3grams fat, 2 grams saturated fat, 35g Carbohydrates, 3 grams protein, 6 mg cholesterol, 106mg Sodium, 6g fiber.

Exchange: 2 1/4 fruit, 1/4 vegetable, 1/4 high fat meat
