Diabetic Pineapple Muffins

These diabetic pineapple muffins will bring a tropical punch to your muffins. Although blueberry muffins are REALLY tasty, these pineapple muffins will be a welcoming change.


Pineapple Muffins

Servings: 12= 1 muffin each

Preparation Time: 15-20 minutes

1 cup bran cereal

1 cup dried pineapple (the small the better)

1 cup apple juice

3 tablespoons vegetable oil

1 teaspoon vanilla

1 cup flour

1/4 cup sugar

1/2 teaspoon baking soda

1. In a large mixing bowl combine 1/2 cup bran cereal and dried pineapple and set it aside

2. In a small saucepan, bring the apple juice to a boil

3. Pour the boiling apple juice into the large mixing bowl with the pineapple bits

4. Stir in the vanilla and vegetable oil

5. In seperate mixing bowl combine the other 1/2 cup of bran cereal and the remaining ingredients. Pour into your mixing bowl with the pineapple bits and mix until nice and moist

6. preheat oven to 375 degrees

7. Fill muffin cups 2/3 full and bake for 25 minutes
