Diabetic Sour Cream Muffins


Thess diabetic sour cream muffins are moist and delicious. Are you watching your fat content? Substitute with fat free sour cream. They were extremely easy to make, and sweet enough for an after dinner treat or a yummy breakfast muffin with your coffee. This was a hit with my husband.



Sour Cream Muffins

12 servings

Measure Ingredient
1/4 cup Diet margarine
3/4cup Imitation sour cream or sour half & half
1 1/3 cup All purpose flour
Non nutritive sweetener to equal 1/2 cup sugar
1/2 teaspoon Baking soda
1/4 teaspoon Salt
dash Nutmeg
1 Egg beaten


1. Preheat oven to 450¸F. Cream margarine; add sour cream; mix well.

2. Sift dry ingredients. Add alternately with egg to first mixture.

3. Spoon into greased muffin tins; bake for 15 minutes.


PER SERVING (1 muffin): Calories: 151 Exchanges: 1 Bread, 2 Fat NOTE: Lower fat grams by using fat free sour cream and egg substitute : or 2 egg whites in place
