Diabetic Spanish Casserole




I love Spanish dishes and this diabetic Spanish casserole is no exception. It tastes good and it's good for you. All of the vegetables mixed in with the garlic and topped off with a lemon zing. YUM!!



Spanish Casserole


4 Servings Measure Ingredient: 3 Zucchini; sliced

3 small Onions; sliced

1 Clove garlic; crushed

3 Large tomatoes, peeled and sliced

Salt and pepper

Parsley; chopped

Lemon rind; grated

1. Cook zucchini, onions and garlic in a small amount of water for 5 minutes. Add tomato and cook for 3 minutes longer. Season to taste.

Portion diets - negligible Calories - 40 per serve (170KJ)
