Diabetic Spinach Dip



This diabetic spinach dip is a favorite of mine. Well, because it is a traditional diabetic spinach dip with an extra added bonus...cheese! Give it a try. It goes great with chips or even some french bread. It's an easy appetizer that everyone is sure to enjoy.

Recipe Ingredients:
16 oz Velveeta Llight pasteurized prepared cheese product, cut up
1 can whole tomatoes - (14 1/2 oz), cut up, drained
1 package frozen chopped spinach - (10 oz), thawed, drained
1/4 tsp red pepper flakes

Recipe Instructions:
1. Microwave Velveeta and tomatoes in 1-quart microwavable bowl on High 5 minutes or until Velveeta is completely melted, stirring after 2 minutes.

2. Stir in remaining ingredients. Microwave on High 2 minutes or until thoroughly heated. Serve hot with bread sticks, tortilla chips or assorted cut-up vegetables.Viola, a delicious diabetic spinach dip!

This recipe yields 3 cups.
