Diabetic Sugar Free Cookie Recipes


These diabetic sugar free cookie recipes are good to eat and still fit within most diabetics nutritional needs. Cookies/dessert is not something that I want to give up. I know that everything in moderation is key, but I must have dessert!!

Sugarless Raisin Cookies ADA Recipe

Recipe Ingredients:

3/4 cup Raisins
2/3 cup Water
1 tbsp Liquid sugar substitute
1 tsp Cinnamon
1/4 tsp Nutmeg
2 tbsp Margarine
1 Egg
1 cup Flour
1 tsp Baking powder
1/4 tsp Salt

Recipe Instructions:

1. Combine raisins,water, sweetner, spices, and margarine in saucepan. Bring to a boil and cook 3 minutes. Cool. stir in egg. Mix flour, baking powder, and salt. Add to fruit mixture and mix well.

2. Drop by teaspoon onto a lightly greased baking sheet. Bake at 350 degrees for 9 to 10 minutes. From ADA Family Cookbook vol. II.

Exchanges per 2 cookies: 1 bread, 1 fat Cal 95, cho 16, pro 2,fat 3, Na 110, K 86.

Servings: 12


Grandma's cook sugar free cookies

Measure Ingredient:

1 cup Raisins
1/2 cup Chopped apples
1/2 cup Margarine
1 cup Quick cooking oatmeal
1 cup Flour
1 teaspoon Cinnamon
1 teaspoon Baking soda
2 eaches Eggs
1 teaspoon Vanilla

1. Preheat a 350 degree oven. In a small saucepan, combine raisins, apples and 1 cup of water cook for 3 minutes, add margarine and let cool.

2. In a mixing bowl, combine oatmeal, flour, cinnamon, baking soda. Add the raisins mixture to the dry mixture. Add eggs and vanilla, mix well. Drop by rounded spoonfulls on greased baking sheet. Bake for 12 minutes.

Note: For fat free substitute for the margarine add ½ cup applesauce.
