Diabetic Sweet Potato Crisps



These diabetic sweet potato crisps make the perfect snack. If you have never tried these, you are missing out! So, go against the grain and fix these yummy crisps.


Sweet Potato Crisps


2 medium sweet potatoes, peeled, and

sliced 1/2" thick (the long way)

1 tsp salt

Olive oil-flavored nonstick cooking spray, as needed

Recipe Instructions: 1. Preheat the oven to 375 degrees. Drop the sweet potatoes into a bowl with enough cold water to cover. Add the salt and soak for 5 minutes. Dry the potatoes.

2. Spray a baking pan with nonstick cooking spray, place the potato slices in the pan, and spray the potatoes on all sides. Bake for 20 to 25 minutes, turning once.

This recipe yields 4 servings. Serving size: 1/2 potato.
