Diabetic Trail Mix Recipes

Crunchy Canyon Snack Mix Recipe
3 cup mini pretzel twists2 1/2 cup wedge shaped cheese crackers 2 cup mini garlic bagel chips, =or= mini garlic rye toas 3 1/4 oz italian breadsticks, break into thirds 1/3 cup butter or margarine, melted 1 tbsp worcestershire sauce 1 tsp lemon juice 1/2 tsp garlic powder 1/2 tsp seasoned salt 1/4 tsp cayenne pepper Recipe Instructions: Heat oven to 350. In large bowl, combine pretzel twists, crackers, bagelchips and breadsticks. In small bowl, combine remaining ingredients; mixwell. Drizzle margarine mix over pretzel mix; toss to coat. Spread evenlyin ungreased jelly-roll pan. Bake at 350 for 10-15 minutes or until crisp,stirring occasionally. Cool completely. Store in tightly covered container. Servings: 8
Tropical Snack Mix Recipe
4 cups Post Spoon Size Shredded Wheat Cereal2 cups dried fruit mix = (such as prune, apricot, or pear) 1 cup Baker's Angel Flake Coconut Recipe Instructions: Mix all ingredients in a large bowl. This recipe yields 16 servings. Serving size: 1/16 of recipe. Exchanges Per Serving: 1/2 Starch, 1 Fruit, 1/2 Fat. Nutrition Facts: Calories 120; Fat 3g; Saturated Fat 2.5g; Cholesterol 0mg; Sodium 25mg; Carbohydrates 25g; Dietary Fiber 4g; Sugars 13g; Protein 2g. Comments: This easy snack mix is a great low fat choice. It's also very low in sodium.
