Diabetic Tuna Recipes




These diabetic tuna recipes are some of my favorites. Even though salmon and shrimp have replaced tuna as America's favorite fish.... I still think tuna is favored by many. Try some of these diabetic tuna recipes and decide for yourself which fish is your favorite?



Tuna Melt Recipe


Recipe Ingredients: 1 can water-packed chunk white tuna - (12 oz), drained, flaked

1 1/2 cups coleslaw mix

3 tbsp sliced green onions

3 tbsp reduced-fat mayonnaise

1 tbsp Dijon mustard

1 tsp dried dill weed

4 English muffins, split, and

lightly toasted

1/3 cup shredded reduced-fat Cheddar cheese

Recipe Instructions: 1. Preheat broiler.

2. Combine tuna, coleslaw mix and green onions in medium bowl. Combine mayonnaise, mustard and dill weed in small bowl. Stir mayonnaise mixture into tuna mixture. Spread mixture on muffin halves. Place on broiler pan.

3. Broil, 4 inches from heat, 3 to 4 minutes or until heated through. Sprinkle with cheese. Broil 1 to 2 minutes more or until cheese melts.

This recipe yields 4 servings.

Exchanges Per Serving: 2 Starch, 3 Meat.

Nutrition Facts: Calories 313; Calories from fat 23%; Total Fat 8g; Saturated Fat 2g; Protein 30g; Carbohydrates 30g; Cholesterol 43mg; Sodium 882mg; Dietary Fiber 2g.

A great diabetic tuna recipe classic!




Tuna Fish, Mushrooms, And Celery Recipe


A diabetic tuna recipe for the concoction lovers!

Recipe Ingredients: 6 1/2 oz (2) cans tuna chunk-style, packed in water

3 tbsp All-purpose flour

2 cup Water at room temperature

3 tbsp Margarine

1/2 cup Instant dry milk

1 cup Thinly sliced celery

1/2 tsp Salt

4 oz (1)cn mushroom stems pieces drained

Whisper of pepper

Recipe Instructions: 1. Drain tuna well. Discard liquid and set tuna fish aside for later use.

2.Place margarine in a 1 1/2 qt. saucepan. Melt over moderate heat. Add celery and mushrooms and cook, stirring occasionally, over moderate heat until celery is limp. Add flour to vegetables and cook and stir until flour is dissolved.

3.With a fork, mix water, dry milk, salt, and pepper to blend. Add to vegetables and cook and stir over moderate heat until smooth and thickened.

4. Add tuna. Mix very lightly and servehot using 3/4 cup per serving.

Yield 4 cups - 6 servings

Nutritive values per serving: 179 calories; 6 gm. carbohydrates;20 gm. protein; 8 gm. fat; 381 mg. sodium.Food Exchanges per serving: 1/2 milk, 2 lean meat

Low-sodium diets: Omit salt. Use salt-free margarine.

Cajun Tuna Recipe


Servings: 2

Recipe Ingredients: 1 can White albacore tuna, drained in spring water

1 tbsp Chipote pepper

1/4 cup Green onions

1 tsp White pepper

1/4 cup Celery, finely chopped

1/8 cup Mayo, (low-cal)

1/2 cup Boiled egg, chopped

2 tbsp Pickle relish

Pickled orka

French bread

Recipe Instructions: 1.Mix well. Serve on french bread with pickled okra.

Asian Tuna Steaks Recipe


Recipe Ingredients: 2 tbsp orange juice, plus 2 teaspoons fresh or frozen,

1 tbsp sesame oil, plus 1 teaspoon

1 1/4 tsp sesame seeds

2 tbsp lite soy sauce

2 tsp fresh ginger, grated, or 1 1/4 tsp

ground ginger

2 scallions, chopped

1 lb tuna steaks

Recipe Instructions: 1. In a stainless steel bowl or plastic resealable bag, combine first 6 ingredients. Add the tuna and let marinate for 20 minutes.

2. Broil or grill the tuna 6 inches from the heat source for 4-5 minutes per side. Cook until done as desired (some people prefer their tuna more rare than others do).

Per serving: calories 221, fat 10.7g, 45% calories from fat, cholesterol 43mg, protein 27.3g, carbohydrates 2.4g, fiber 0.2g, sodium 354mg.

Exchanges: 3 Lean Meat Exchange.

The recommended wines are: Chardonnay, Sauvignon Blanc, or Riesling.
