Diabetic White Bean Soup




This diabetic white bean soup recipe is the opposite of your black bean soup. You'll find that the white beans, garlic, and onion in a broth make it light and tasty. This soup you can have prior to you main course and still have room and enjoy your dinner!








WARNING: THIS SOUP TAKE ABOUT 2 HOURS TO COOK. IT IS GOING AGAINST MY "EASY" PHILOSOPY, BUT I HAD TO BRING IT TO YOU. :)

White Bean Soup



1/4 cup Onion, chopped

1/2 tsp Garlic, minced

3 tbsp Olive oil, divided

1/2 lb Dry great nothern beans-washed

2 qt Water

2 Bay leaves, large

1 tsp Dried basil

1 /2 tsp Salt

1 /2 tsp White pepper, ground

2 tbsp Parsley, fresh chopped

2 Green onion, chopped

Recipe Instructions:

1. Saute onion and garlic in 2 tablespoons of olive oil until soft, stirring often. Add bean, water, bay leaves, and basil. Bring mixture to a boil, reduce to a simmmer, and cover.

2.Continue cooking until beans are tender, about 2 hours, adding more liquid if necessary and stirring occasionally.

3.Season with salt and serve
