Sugar Free Oatmeal Cookie Recipe


This sugar free oatmeal cookie recipe is full of ol fashioned oatmeal cookie ingredients. You can't have an oatmeal cookie without walnuts and raisins. That is for sure! The recipe calls for fruit sweetener. Fruit sweetener can only be found at health food stores and is a tad costly at 7 dollars. Fruit sweetener has a low glycemic index. Keep that in mind before you start this recipe!Also keep in mind that this sugarless oatmeal cookie recipe is not quick and easy! It takes some time to bake, but well worth the time.

Fruit Sweet And Sugar Free - Old Fashioned Oatmeal Cookie

Yield: 3 dozen

Measure Ingredient:

3/4 cup Walnuts
3/4 cup Raisins
1 cup Butter
3/4 cup Fruit sweetener(only found in certain health food stores.
2 Eggs
1 teaspoon Vanilla extract
1 teaspoon Cinnamon
1 teaspoon Baking soda
pinch Salt
1 1/2 cup Unbleached white flour
1 1/2 cup Rolled oats

1. Preheat the oven to 350 degrees. Toast the walnuts in the preheated oven for 7-10 minutes, stirring occasionally. Allow the nuts to cool.

2. Then process in a food processor, using the pulsing action, until they are coarsely chopped.

3. Bring 1 cup water to a boil, and add the raisins. When the water returns to a boil, turn the heat off, and let the raisins plump in the water for at least 10 minutes. Drain the raisins, saving any raisin water for another use.

4. Cream the butter and sweetener together. When light and fluffy, add the eggs one at a time, beating well after each addition. Stir in the vanilla, cinnamon, baking soda, and salt. When mixed, add the flour, oates, chopped nuts, and plumped raisins. Cover the dough and refrigerate it for 30 minutes to
