Apricot Chicken for 2

Apricot chicken brings back some fond memories of special dinners with family.  Served with rice and a vegetable, and this recipe serves the small, intimate party of 2…to make some new memories!

2 Tablespoons apricot preserves

2 Tablespoons Russian or French salad dressing

Pinch of ginger

2 Bone-in chicken breast halves

Salt and pepper to taste


In small bowl, mix preserves, salad dressing and ginger; set aside.

Place chicken in greased 8-inch square baking pan – sprinkle with salt and pepper if desired.

Top with apricot mixture.

Bake uncovered @ 350° for 50-55 minutes, or until chicken juices run clear.
