Baked Tomatoes

With summertime comes TOMATOES galore! Enjoy this great recipe and remember to adjust seasonings to your liking.

Recipe for Baked Tomatoes

4 Servings 1 Serving = 1 Tomato

4 medium (about 1 lb) tomatoes

1 slice bread, finely crumbled (3/4 c soft crumbs)

½ teaspoon herb or Italian seasoning

1 tablespoon finely sliced and diced onion

1 teaspoon margarine, melted

Preheat oven to 350°. Wash tomatoes and cut a thin slice off the top; scoop pulp into a bowl, leaving the outer shell. Mix the pulp, ½ cup of breadcrumbs, seasonings, and onion. Place tomato shells into an 8-inch square pan or pie pan.Dividing the pulp mixture evenly between the tomatoes, spoon it into the shells carefully. Mix the melted margarine with remaining ¼ cup of bread crumbs and sprinkle on top of tomatoes. Bake about 20-25 minutes, until tomatoes are tender.
