CHUNKY CHICKEN STEW            2 Servings        

This is a full-bodied chicken stew to help warm your winter evenings.  This recipe is for 2 servings – 2 meals of yummy goodness, or sharing with a dear friend.  Enjoy with some crisp warm bread!


1 teaspoon olive oil

1 small onion, chopped

1 cup thinly sliced carrots

1 cup chicken broth – fat-free and reduced sodium

1 can (14 ½ oz) diced tomatoes, no-salt-added, undrained

1 cup diced cooked chicken breast

3 cups baby spinach leaves


Heat oil in large saucepan over medium-high heat; add onion and cook about 5 minutes or until golden brown, stirring occasionally.

Stir in carrots, then broth; bring to boil.

Reduce heat and simmer uncovered for 5 minutes.

Add tomatoes and simmer 5 minutes or until carrots are tender.

Add chicken and heat thoroughly.

Add spinach, stirring until spinach is wilted; simmer 1 minute for finished meal.

You can change-up the flavor with your favorite seasonings...marjoram, thyme, or go in a different direction with garlic, oregano and basil!  Experiment, using your favorites!
