This flavorful and hearty chili can cook up to 10 hours in your crockpot, in case
your day is a long one away from home. Since chili has been my favorite cool-
weather food of all time, coming home to a crockpot full of its wonderful flavor and
aroma causes extra excitement when coming home after a long day at work.
Ingredients
2 pounds ground beef
2 cans (16 oz each) kidney beans, rinsed and drained
2 cans (14 1⁄2 oz each) diced tomatoes, undrained
1 can (8 oz) tomato sauce
2 medium onions, chopped
1 green pepper, chopped
2 garlic cloves, minced
2 tablespoons chili powder
2 teaspoons salt, optional
1 teaspoon pepper
Shredded cheddar cheese, optional
In a large skillet, brown beef; drain.
Transfer to a slow cooker.
Add the next nine ingredients.
Cover and cook on low for 8-10 hours, or on high for 4 hours.
Serve with cheese for individual servings.
1 Serving = 1 cup (Prepared with extra-lean ground beef and no salt or cheese)
