This refreshing salad is so much like one that I’ve prepared for MANY years. Garlic and dill can be adjusted to your personal taste.
1 large cucumber, peeled
1 medium onion, cut into rings, then in half (as in half-moons)
1 cup plain, low-fat yogurt
2 tablespoons vinegar
1 tablespoon fresh dill (or 1 ½ teaspoon dried)
1 clove garlic, crushed (or ½ teaspoon garlic powder)
Cut cucumber into thin slices.
Add remaining ingredients and mix thoroughly.
Chill at least 1 hour before serving.
