Italian Turkey Breast

ITALIAN TURKEY BREAST                    

Having turkey for a meal always seems like a special occasion to me. This wonderful meal can be served any number of ways, either with traditional mashed potatoes or with your special pasta and sauce.  Your choice of vegetable and a green salad will complete this mighty-fine meal for two!

1 1/2 tablespoons all-purpose flour

2 turkey breast slices – 3 oz. each

2 teaspoons olive oil

1 teaspoon butter

1 – 8 oz. can tomato sauce – “no-salt added”

1 teaspoon each: oregano, basil, thyme

2 teaspoons shredded mozzarella cheese – reduced fat

1 teaspoon Parmesan cheese – reduced or non-fat


Pour flour into a shallow bowl and dredge turkey slices in the flour. 

Using a skillet over medium heat, brown the turkey slices in the oil and butter. 

Combine tomato sauce and the seasonings, then pour over turkey.

Bring to a boil, then reduce heat.

Cover and simmer 3-4 minutes, or until meat is cooked thoroughly.

Sprinkle with cheeses and serve!
