Zuchini Mushroom Sauce with Wild Rice

3 med zuchini sliced 1/4" thick

4 cloves garlic minced

2 Tablespoons olive oil

dash oregano

dash salt

dash pepper

dash thyme

1 green or red bell pepper diced

1/2 spanish onion diced

2-3 large tomatoes diced

6 med size mushrooms sliced thick

2 cups grated jack cheese reduced fat

2 boxes long cooking wild rice


Cook wild rice according to package set aside.

Meanwhile in large skillet put olive oil in pan over med-high heat and sauté zucchini, onion, bell peppers, garlic, seasonings ending with tomatoes, mushrooms they take the least amount of time to cook. place veggie sauté and rice in ungreased oblong glass dish toss . cover with your cheese. Preheat oven 375* cook for 25 mins and serve
