These diabetic baked eggplant recipes are full of flavor. You can grill them, baked them and even broil eggplant! Enjoy these recipes.
Sometimes it's hard to tell if you are buying a really good eggplant. It's important, especially in a dish where eggplant is your main "meat." Sometimes I will reach for the largest eggplant, but that is not always the best eggplant to choose. Look for eggplants that have a glossy skin, somewhat firm on the outside, and without spots. This includes soft spots that are easily detected by pressing on the skin.
1 slice Eggplant;
1 slice Onion;
1 ounce Cheddar cheese; shredded
2 tablespoon Condensed tomato soup;
1 teaspoon Dry bread crumbs;
1 teaspoon Thyme;
1 teaspoon Salt;
1.Cook eggplant and onion in small amount of water until, tender. Drain; reserve liquid. Place eggplant and onion in small baking dish. Top with cheese.
2. Blend condensed soup, 1 Tb of eggplant liquid, bread crumbs, thyme, salt, and pepper. Pour over eggplant; cover.
3. Bake at 350f for 30 minutes. Microwave: Uncover. Cook on high for 5 minutes. Turn after 2 minutes.
