These diabetic gyros are easy to make and full of flavor. I love wrapping delicious ingredients into an all in one meal. This Turkish dish can be made with various meats. I have made gyros out of pork, chicken, turkey, and beef. Lamb seems to be my favorite cut of choice. It has a good consistency in the gyro and is semi sweet.
Gyros are a tad bit like tacos. We have had a Gyros party and set up a gyros bar. You can display numerous toppings to put in your gyros, just like a taco bar. Some toppings include; lettuce, tomato, eggplant, cabbage, cucumber, pineapple, and cabbage. You can also top your wrap with a different array of sauces. We put out hot sauce, yogurt, hummus, and tahini.
You can serve your gyro wrap with many side dishes. A cucumber salad, pita chips and hummus, coleslaw, or a greek salad!
Yield: 8 servings
2 pounds Ground beef or lamb or both
4 Green onion; finely chopped
1 cup Garlic; minced
1 teaspoon Oregano
1/4 teaspoon Cumin
1/4 teaspoon Parsley
1 teaspoon Salt
1/4 teaspoon Pepper; freshly ground
8 Lg pita
Mix all ingredients except pita, mixing well and kneading until mixture is stiff. On skewer pack meat mixture about 5" long and not more than 2" in diameter. Put as many "fingers" as possible on a skewer leaving a 1" space in between. Cook over hot coals 10-15 minutes, turning frequently. Take pita and slide gyro into center.
Drizzle with sauce. Fold over to eat. Sauce: Tzatziki 1 c yogurt, 1 T mayo,juice of 1 lemon, 2 scallions including green tops,(finely chopped), cucumber (minced), 5 cloves garlic (minced).
