This diabetic mushroom rice recipe is easy to make and is delicious to taste. You really have to be a mushroom fan to enjoy this dish. Rice can get quite boring at times, so a vegetable is a welcomed addition to any rice dish.
3 oz Mushrooms, sliced
2 tbsp Butter (or marg.), melted
1/2 tsp Salt
dash Pepper, white
1/4 cup Sherry
3 cup Rice, hot, cooked
1. Drain mushrooms, reserving liquid. Saute mushrooms in butter about 5 minutes. Add salt, pepper, and sherry; simmer about 5 minutes. Stir in rice; add liquid drained from mushrooms and heat thoroughly.
