This diabetic oatmeal is delicious. Every morning I start out with a good bowl of oatmeal. It fills me up and fuels me for the remainder of the day. This recipe is a healthy one. It's low calorie and low fat, you really can't beat that.
Yield: 4 servings
1 1/2 cup Water
1/4 teaspoon Salt
2 tablespoons Raisins
1/3 cup Uncooked quick-cooking oats
1 teaspoon Ground cinnamon
1. Combine water, salt, and raisins in a small saucepan; bring to a boil. Stir in oats and cinnamon.
2. Reduce heat, and simmer 1 minute or until water is absorbed. Remove vrom heat, and serve warm.
Makes 4, 1/2 cup servings. Nutritional information per serving: calories - 93, protein - 3 gm., fat - 1 gm., carbohydrates - 18 gm., cholesterol - 0 mg., fiber - trace, sodium - 197 mg. Diabetic Exchanges: Starch - 1.
