This diabetic ricotta cheese spread goes great on bagels or toast. The vanilla and cinnamon gives it a very unique flavor. You really can dip or spread just about anything in it that would go well with cheese.
1/4 cup part-skim ricotta cheese
1 packet sugar substitute
1/8 tsp vanilla
1 dash cinnamon
1. Mix together cheese, sugar substitute, and vanilla.
2. Spread mixture evenly on bagel halves.
3. Sprinkle with cinnamon.
Place bagel halves under broiler and broil for 1 to 2 minutes until cheese mixture is bubbly.
Exchanges: All breakfast menus this week have 350 calories total and include:
2 Starch servings 1 Fruit serving 1 Skim Milk serving 1 Fat serving
In some menus, one Meat serving has been used in place of either the Skim Milk serving or one of the Starch servings.
